Courgette Flower Fritters

Aperitif time in Provence and especially here at our four-star campsite Le Jardins de La Pascalinette® – camping 4 étoiles, is somewhat sacred!
That’s why we’re pleased to offer you some of the typical recipes of the Var area and South of France (we all share the same singsong accent!).

Today, we invite you to try your hand at Courgette Flower Fritters: a sheer delight and, as always, perfect served with a chilled rosé* from La Londe (or glass of sparkling water of course!).

What you’ll need:
– 1 egg
– 150 g flour
– 1 sachet baking powder

– Salt & pepper
– Olive oil
– Frying oil (grapeseed or coconut)

– Around 20 courgette flowers

  • Prepare the dough: mix the baking powder, flour and egg, then add one or two tablespoons of olive oil. Dilute with a bit of water, season with salt and pepper and put aside in the refrigerator for at least an hour.
  • Heat the oil in a pan or deep fryer.
  • Remove the base (pistil) from the courgette flowers then dip them delicately in the dough and place them gently in the hot oil. Brown for around 2 minutes on each side (according to the temperature of your oil), then drain on kitchen paper.
  • Season with salt and pepper.
  • Enjoy!
